Breakfast: Why Skip it?
Did you know that skipping breakfast can make controlling your weight more difficult?
Every morning I try to start my day with something healthy and quick. Breakfast doesn't need to take more than 10 minutes to make if you are in a crunch for time. My breakfast omelet with half an orange takes less than 7 minutes from start to finish.
Breakfast seems to be the most important meal & the quickest to make, so why skip it?
For a quick and healthy breakfast try my mushroom omelet with a kick!
Here's the recipe:
2 large eggs or 4 tiny farm eggs (lightly beaten)
3-4 mushrooms (sliced)
1 slice pepperjack cheese
1 oz mozzarella (shredded)
cooking spray
Coat a skillet with cooking spray and saute the mushrooms, pour the egg mixture over the mushrooms and cook for 1-2 minutes. Break up the sliced cheese a spread over one side of the eggs and mushroom. Sprinkle the mozzarella over the pepperjack. Fold the other side of the egg over the cheese and cook for an additional 1-2 minutes or until the egg is firm. Remove from pan. Serve warm and enjoy!
I enjoy my omelets with some orange slices or strawberries. Other sides that go well with the breakfast omelet are grapes, cottage cheese or even a whole wheat bagel.
